Passing On

Helen Zytkus
1915-2005


Helen Zytkus is my step-mother-in-law's mother, and she passed away yesterday. I, unfortunately, never really had an opportunity to know Helen, but I have been told she was a lovely lady. Although I never knew her, I grieve for the people she left behind - her husband Chester, her two children, and her only grandchild, my brother-in-law Chris. I cannot imagine losing my mother or grandmothers or how difficult it must be. I pray that Brian and I take this time to share God and all of His wondrous blessings to our family.

House

We haven't heard anything back on our offer yet - should hear something after noon today. Turns out after having no interest in the house the entire time it's been on the market (since September), they received another offer on it yesterday as well. With it being a Fannie Mae house and with dual offers, we only get to counter twice. Our second offer was the full price of the house ... but it's possible the other people offered the same thing, or even higher than asking price. As upsetting as it is, it's nice to know that if this really isn't the house, God has something even better for us. Also, my boss got me in touch with a good friend of his at a mortgage company and they are able to give us a way better deal than the lender we were planning on using ... so at least if we don't get this house, we'll have another pre-approval letter in our back pockets when we find something else.

Time well spent

I was very fortunate to have 5 days off last week, and I certainly enjoyed them! I already posted what happened most of Wednesday, although that night Brian took me to see P&P, which we both loved.
Thursday was Thanksgiving, and there is so much to be thankful for this year. Our health - last year at this time I was gearing up for a most painful surgery from which I completely recovered. Family - three new babies (Joey, Aine & Sophie), plus a 6 yr old girl from Haiti that M&B are sponsering through Compassion International. Work - after being let go from the Museum in May after 4 years of diligent work, Brian was crushed. My boss immediately gave him a temporary job that kept him busy over the Summer and after that, Brian was able to get back in at Dillin Engineered Systems. Home - we moved into our 2 bedroom apt in April, and with Brian not working steadily, struggled through the Summer to pay our rent. Now we're back on our feet and we're putting an offer on a house today!
Friday we hung out at Levis Commons, and Saturday we ran around and went to Olive Garden for lunch ... that night Brian and I saw Elizabethtown, which neither of us liked too well. Yesterday morning we had breakfast at Mar & Dad's and sent Mindy and Brandon on their way! Then B & I drove out to Gram & Papa's for the afternoon and ran errands ... Lowe's, Monnette's and then we came home and put up our Christmas tree. The lights are up and our lovely red mirrored garlands, but we are finishing it tonight while we watch Elf again.

Spending time with Seester

Mindy and I went to lunch today - Golden Jade of course! We ate and talked and now we're at Mar's for a while, since she is ill - poor Marmee. We're leaving soon to go to the mall and look for fancy dresses.
It is snowing! Oh how I love snow. I certainly wasn't prepared this morning when I left the house, because I thought it was going to snow tonight instead ... so I have to find my car-brusher-offer. Anyways, I actually do like driving in the snow, except for fish-tailing, which I did once on my way to Withrow's to pick up Mindy. And I do get nervous when Brian drives his car in the snow ... Camaros aren't really snow cars ... but he should be getting his Dad's old truck soon (for free!).
Okay, time for the trying on of fancy dresses!

Restful

This weekend was fairly uneventful, which is a good thing nowadays in my book. Friday night we ended up going over to the house and showing it to Fred & Vicki ... again, we were there for about 1 1/2 hours. We were shocked when we opened the door ... the entire place was painted a nice creamy white, even the basement. It looked a 1000x better! They even fixed a hole in the floor in the 2nd bedroom upstairs - it's perfect. My in-laws loved the house, especially Vicki, who kept talking about the gorgeous woodwork and cove ceilings (which happen to be my 2 favorite features about the house). Anyway, hopefully we can get moving on our offer this week. I'm just waiting to hear from the mortgage people to get our pre-approval letter faxed over here and then we can get the purchase agreement and make our offer! Good times.
Okay ... time to work.

YAY!

Brian just called ... effective Monday, he is an employee at Dillin! But the best part ... our insurance is effective on Monday also! Now we can go to the dentist, and I can get new contacts, and get all the bloodwork and ultrasounds and medication that I've been needing. HOO-RAY!
Oh yeah ... and we can buy our house!

Snow

Yesterday afternoon we enjoyed the first snow of the season!
Well, at the time it was more like, "We're not ready for snow!" and "It's so freaking cold!" and "I need more coffee! Coffee, coffee, coffee!" (I'm not sure if that last one was really about the snow at all). As cold as it is, I do love snow, and trudging around in boots. I guess I just wasn't prepared to have snow before Thanksgiving! But it's all good.
Cutest thing ... last night, Brian took the dogs out for a walk, and came back in dancing and saying, "Oh it's the first snow of the season, oh it's so magical, oh it's so wonderful!" and I just stared at him. He looked at me and said, "Well it's fun with Lorelai does it!! Why can't I!" My 32 yr old mechanically-inclined, car-loving, beer-drinking, rough-and-tumble husband even RECALLING something that happens once in every season of Gilmore Girls about killed me. I was still laughing when I went to bed last night.

Thanksgiving with Friends

I'm preparing my first Thanksgiving feast this Saturday for Brian, Kelly & Craig. I'll be making roasted turkey breasts with carrots & shallots w/gravy, garlic mashed potatoes, fresh cranberry-pear relish, some type of stuffing and apple pie. YUM!

The Storm won last night! 4-1! The cutest kids were sitting behind us ... one of them, his name was Justin, he looked to be about 8 or 9, he was so freaking cute. "GO MARTIN! ... oh man ... I just get so emotional about hockey.... GO SCOOTER SMITH, GO!" It was too cute.

Long story short...

... when Brian was at Sunday's race, he wandered over to the XM Satellite Radio booth, struck up a conversation with the woman running the booth, who ended up being from Detroit. They talked, and long story short, she gave him a free XM Satellite receiver, 2 free months of service & only 8.99/mo after that. How cool is that!

Everyone's Gone.

My parents are gone to Philly for the weekend (perhaps they will meet the now infamous Mike & Rachel Vendsel), Lynda and her significant other are gone to Chicago, and KD and her folks are also gone to Chicago for the weekend.
Anyway, we tried new The Claddagh Irish Pub last night. The ambiance was lovely, but the food was nothing to write home about (I'm guessing only because it's typical Irish food ;o), but Brian enjoyed his Guinness and our date night was still fun.

Mini-Vay-Ks

Today I requested the 23rd off - and apparently since my boss is so kind, he'll most likely be giving us the day after Thanksgiving off, SO .... that means I'll have a lovely 5 day mini-vacation!! Mindy and I are going to be girls on the 23rd! (I can't say doing what, cos it's a surprise for her!)
I've been thinking of starting some Christmas shopping, but I'm holding back. If we end up buying the house, we'll probably just get gifts for kids - sorry to all the grown ups! We'll have a ton of stuff to get for the house, so money with be extra-extra tight for us. But who knows what'll happen!

Approval

We were approved for a mortgage!

We still have to find out all the details, and meet with the mortgage guy about rates, payments, etc, but I'm very happy to know we are able to get the financing when we need it. Now I just hope we can get things taken care of in an orderly fashion and that the house will still be available! It seems like just the right house for us, but I guess time will tell.

Yay for Half-Days

I'm only working 'til 1 today, so's I can go take care of my sick Marmee - and also so I can stop at jjill.
I finally ordered Mudhouse Sabbath, and also Sex and the Supremacy of Christ. (TMI?) They should be arriving soon! I'm all about new bookage.
Speaking of reading, Seester has her blog up now - mindywithrow.blogspot.com. Read only if you want to become brighter and more enlightened.
Brian called earlier... looks like they're not getting home until tomorrow morning. Wah.

Edit: On my way to Mar's, I stopped @ BAM and picked up Taste & See, another John Piper book. I also bought a new Bible ... a much smaller, lightweight Bible. My other Bible weighs about 8 lbs.

A Bit O' Pampering

So Kate (she is KD no longer!) and I are going to the beauty-bar this weekend for some much-needed pampering. They have these delicious chocolate manicures and pedicures - mmm. They even come with a chocolate drink! Anyway, I'm going to try to talk Mar into going with us, even though she hates spending money and being pampered, but it's fun! So hopefully she'll come with us :o)
I'm off to say goodbye to my hubby now!

Crispy Turkey Cutlets w/ Bacon-Cranberry Brussels Sprouts

Rachael Ray's Crispy Turkey Cutlets w/ Bacon-Cranberry Brussels Sprouts
(serves 4)

2 tb. vegetable oil, plus some for shallow frying
5 slices bacon, chopped
1 large onion, chopped
1 tb. fresh thyme leaves, chopped
salt and freshly ground black pepper
2 lbs. turkey breast cutlets
1/2 ts. poultry seasoning
3 to 4 tb. all purpose flour
2 c. plain bread crumbs
1 lemon, zested, then cut into wedges
2 eggs
2 10 oz boxes frozen Brussels sprouts, defrosted
1/2 c. dried cranberries
3/4 c. chicken stock or broth
1/2 c. fresh flat-leaf parsley leaves, chopped

Start the bacon-cranberry Brussels sprouts by pre-heating a nonstick skillet over med-high heat w/ the 2 tb of vegetable oil. Add the chopped bacon and cook until crispy, about 2 to 3 minutes. Add the onions and thyme, season w/ salt & pepper, and cook for 3 to 4 more minutes.

While the onions are cooking w/ the bacon, season the cutlets with the poultry seasoning, salt & pepper on both sides, and dredge in flour. Combine the bread crumbs and lemon zest in a shallow dish. Beat the eggs in a separate shallow dish with a splash of water.

Heat 1/2 inch of veg oil in a large skillet over med to med-high heat. Coat the cutlets in eggs, then in breading, and add to the hot oil. Cook the cutlets in a single layer, in 2 batches if necessary, for about 3 or 4 minutes on each side, until their juices run clear and the breading is evenly browned.

While the first batch of cutlets is cooking, add the defrosted Brussels sprouts to the bacon and onions, toss, and stir to combine. Add the dried cranberries and the chicken stock to the pan and continue to cook for 3 to 4 minutes, or until the Brussels Sprouts are heated through and the cranberries have plumped. Finish the sprouts with the chopped parsley.

Serve the turkey cutlets alongside the bacon-cranberry Brussels sprouts. Pass the lemon-wedges; squeeze the juice over the cutlets at the table.

Pineapple-Rum Chicken

This is one recipe I'll be trying out this weekend.

Rachael Ray's Pineapple-Rum Chicken
(serves 4)

1 1/2 c. jasmine rice
1 whole pineapple, cored & peeled
3 tb. vegetable oil
1 small yellow onion, diced
2 garlic cloves, chopped
coarse salt
1/2 ts. crushed red-pepper flakes
1/4 c. (a 2 oz nip) spiced rum, such as Captain Morgan's
2 c. chicken stock or broth
4 6 oz boneless, skinless chicken breast halves
coarse black pepper
1/4 c. fresh flat-leaf parsley leaves, chopped
2 tb. fresh cilantro leaves, chopped

Cook rice according to package directions. While it cooks, make chicken & sauce.
Cut pineapple into bite-sized chunks. Heat a medium saucepan over med-high heat. Add 1 tb of vegetable oil, once around the pan. Add the onions, garlic, salt & crushed red-pepper flakes and cook for 2 minutes, stirring frequently. Add the pineapple chunks and the juice from the container (if you buy a whole pineapple already peeled and cored), no more than 1/2 cup, and stir to combine. Remove the pan from the heat and add the spiced rum. Return pan to the heat, keeping a little distance in case the pot flames up. Let the alcohol cook away, 1 minute. Add the chicken stock and bring the mixture to a simmer, then cook until it reduces by half and has thickened slightly.
While the sauce is simmering, preheat a large nonstick skillet over med-high heat w/ the remaining 2 tb of vegetable oil. Season the chicken w/ salt & pepper and add to the hot skillet. Cook the chicken for 6 minutes on each side. For a smoky taste, grill the chicken on a grill pan or on an outdoor grill.
Slice the breasts and return to the large skillet. Pour in the pineapple and sauce and combine with a good shake of the pan. Add the parsley & cilantro to the pan and turn off the heat. Let stand for a minute or two. Serve up the jasmine rice and top with chicken.

yes, i'm alive.

we're alive, just busy. last night we met with a guy from primerica and filled out paperwork to get pre-approved for a mortgage. we went over all our finances with him and he seemed to think everything was okay. i think he was shocked that we don't have all the debt he was expecting (and we have quite a bit, in my opinion, although not NEARLY as much as we used to have). anyway, he said we'd maybe hear from him by the weekend.
my hubbin's leaving tonight with his daddy for oklahoma & texas :o( i don't want him to go! i hate that he will be away from me for 4 1/2 days. it makes me crabby. but i work a full day tomorrow, and then kd's supposed to come into town, and i don't care what she says - we're each getting a mani on saturday - maybe a pedi, too! plus i gotta clean another apt and i really want to try a few new recipes (from 365: no repeats), so i'll have plenty to keep me busy. i just don't like sleeping alone.
brian hasn't gotten sick yet, but i'm still fighting a sinus infection. i think mindy's still sick, too. it sucks!
